Gluten Free Seared and Slow Simmered Beef Stew

This slow cooked beef is fall off the bone tender with gluten free gravy base making a delicious stew for any occasion!

Ingredients

Main Ingredients
 5 lbs bone-in beef roast
 4 Carrots, sliced into chunks
 2 Celery stalks, sliced
Seasoning
 2 tbsp Vegetable oil
 1 tbsp Salt
 1 tbsp Garlic Powder
 1 tbsp Margarine
 10 oz Mushrooms, sliced
 2 Small onions, diced
Stock
 2 ½ cups Chicken broth
 2 tbsp Tomato puree

Peel carrots and cut into chunks about 2 inches long. Slice celery into small 1/4 inch slices. Place at bottom of slow cooker.

Mix salt, garlic powder and gluten free flour then season all sides of the roast. Sprinkle seasoning over the roast and push into the meat generously until well coated on both sides.

Heat a large pot heat to medium-high with 2 tbsp of vegetable oil and when ready place the roast into the pot searing each side for 6 Minutes each side, until well browned, locking in the flavour. Remove from heat and set on top of carrots in slow cooker.

Using the juices from the roast, add the margarine, then cook the mushrooms until soft and tender approximately 4 minutes. Add onions and cook for another 5 Minutes until onions are translucent and begin to brown.

Add 1/2 cup of chicken broth, tomato puree, and then 2 tbsp of gluten free all purpose flour. Stir until combined into liquid. Bring to a gentle boil then add remaining chicken broth while stirring until bringing to a gentle boil once again. Remove from heat.

Pour mushrooms, onions and juices over top of the roast. Close slow cooker, turn onto your slow cooker's high setting and cook for 5 Hours.

After 3 hours, skim off any fat that has collected on the top. Cover and cook for 2 more hours. The meat should fall off the bone with a fork when it is finished. Slow cookers with lower temperatures may take 1 hour additional cook time.
