Paleo avocado baked eggs super breakfast

Avocado is considered a superfood for it's nutrient and antioxidant contents. This yummy breakfast adds avocado to your everyday meal plan.

Yields1 Serving

Ingredients

 1 Avocado
 2 Eggs, small
 ¼ tsp Salt
 1 pinch Fresh ground pepper
 1 pinch Parsley



Directions

Preheat oven to 425 degrees.

Cut the avocado in half lengthwise and twist to separate the 2 parts from the pit. Use a spoon to scoop out the pit.

Scoop about 2 tbsp of space into each side of the avocado for the egg to go into.

Arrange the avocados in your baking dish. Use the edges of the dish to balance the halves. Once you put the eggs in they may tip, so now is your opportunity to stabilize them in your dish.

Crack 1 egg into a small bowl carefully. You do not want to break the yolk.

Carefully spoon the yolk out and put it into the avocado hole you created. Add egg white to fill the hole.
Repeat with the second egg and avocado half.

Sprinkle the salt, parsley and pepper over the avocado. Place in the oven very gently, eggs are mischievous they like to jump out of the avocados.

Bake for 15 Minutes or until the eggs reach the desired yolk consistency you will enjoy.
