Gluten free cauliflower fritters

These gluten free fritters will fill you up and give you plenty of energy great as a meal or just a one at a time snack.

Ingredients

 1 Cauliflower head
 2 Eggs
 2 tbsp Olive oil
 ¼ tsp Salt
 1 cup Almond flour



Directions

In a large saucepan, bring water to boil over high heat. Add cauliflower and boil for about 15 Minutes or until tender right through.

Remove from heat and strain. Transfer to a large bowl and mash with a fork or masher.

In a small bowl, mix eggs, cayenne pepper, salt and pepper and mix until well blended. Pour the mixture over the mashed cauliflower in the large bowl and mash the mixture with the cauliflower until everything is evenly coated.

Measure 1/4 cup portions of the cauliflower mix and press them into patties.

In a large frying pan, heat 1 tbsp olive oil over medium heat.

When the pan is hot, sear the patties for 5 Minutes each side being careful not to burn them. The outside should have a crispy seared surface, this holds the patties together better. If you don't harden the outside with a hot enough pan or frying it for a long time the patties will be mushy and fall apart.
